GITHERI RECIPE

Apart from ugali, Githeri  is also one of the main staple foods in Kenya.  It is a mixture of maize and beans. There are variations of this mixture that may include adding peas, groundnuts, potatoes and vegetables.

WHAT YOU NEED
  • Five green maize removed from the cob
  • Half a kilogram of beans
  • Three peeled and sliced carrots
  • A quarter of small cabbage- washed and chopped 
  • Three to four peeled and cubed potatoes
  • One and a half cups coconut milk
  • One big chopped onion
  • Two chopped tomatoes
  • Half a teaspoon of tumeric powder
  • One teaspoon of salt
  • One teaspoon of oil
HOW TO PREPARE
1.      Clean the beans and groundnuts then soak separately for 6 to 12 hours.
2.      Wash and boil the groundnuts for at least one hour.
3.      Wash the maize and beans and add into the pan with groundnuts. Cook for an hour.
4.      In another pan, fry onions till tender. Add tumeric powder and stir for two minutes.
5.      Add the chopped tomatoes and salt. Stir and cover with lid. Let it cook on low heat for three minutes.
6.      Add  carrots and potatoes and stir.
7.      Add the coconut milk and let it cook on low heat for 15 minutes.

SERVING TIPS:
The githeri stew can be served on its own or with beef stew and steamed cabbages.
