- Quarter kilogramme ndengu
- 1 tablespoon of oil
- One chopped onion
- One garlic clove chopped
- One large tomato chopped
- One tablespoon of curry powder
- Salt to taste
- A cup of fresh milk or coconut milk
How to Prepare Ndengu
- Select and wash the ndengu. Soaking the ndengu either overnight, or for a couple of hours can reduce cooking time.
- Boil the ndengu until its soft.
- Put aside and let it cool before mashing.
- In a separate pan, fry onions till tender.
- Add garlic and continue frying for two minutes.
- Add curry powder, tomatoes and salt. Stir briefly and cover with lid. Let it cook for three minutes.
- Add ndengu and the milk and stir. If the consistency is too thick, add more milk and stir until you have a fine paste..
Serving Tips
Serve hot with the chapatis.
