WHAT YOU NEED
- One kilogram matumbo (tripe) which should include the blanket,the book, the honeycomb and pocket tripe.
- Four large tomatoes, chopped
- Two garlic cloves crushed
- Two onions,chopped
- One teaspoonful of curry powder
- One cup coconut milk
- One tablespoon tomato paste
- One teaspoonful cooking oil
- One bunch dhania(coriander)
- Salt
HOW TO PREPARE MATUMBO
- Wash the matumbo thoroughly. For matumbo to be fit for human consumption it needs to be cleaned meticulously.
- Boil for one hour and drain the stock
- Heat and fry the onions till almost brown
- Add curry powder and stir briefly
- Add tomatoes and salt and cook till soft
- Add tomato paste and stir Add coconut milk and bring to boil
- Add the matumbo and stir. Cover and simmer for 15 minutes.
- Serve immediately while still hot
SERVING TIPS
Serve with Mukimo or ugali. Matumbo must be hot, for it to taste good.
